Mixed Berry Popsicles Recipe

These refreshing and healthy mixed berry popsicles are ideal for hot summer days. They have a creamy and delicious flavor because they are made with fresh berries, Greek yogurt, and a touch of honey and vanilla.

  • Prep Time: 15 minutes
  • Cook Time: 10 minutes
  • Total Time: 25 minutes

Instructions

  • Over medium-high heat, combine the mixed berries, sugar, and water in a small saucepan.
  • Bring to a boil, then reduce to a low heat and continue to cook, stirring occasionally, for 5-7 minutes, or until the berries have broken down and the mixture has thickened slightly.
  • Allow to cool to room temperature after removing from the heat.
  • In a medium mixing bowl, combine the Greek yogurt, heavy cream, honey, and vanilla extract.
  • Divide the cooled berry mixture evenly among the popsicle molds, filling each one-third of the way.
  • Fill each mold with a spoonful of the yogurt mixture, about a third of the way full.
  • Fill each mold to the brim with the remaining berry mixture and yogurt mixture.
  • Insert popsicle sticks and place in the freezer for 4-6 hours or overnight.
  • Run the popsicles under warm water for a few seconds before gently pulling the sticks out of the molds.
